5.The Detonation Tenderizer: A Literal Flavor Explosion5. Over the years, the U.S. Patent and Trademark Office has rounded up herds of ideas for tenderizing meat, from the familiar (spiky hammers, enzymatic tenderizers) to the outlandish (using pressure pulses or acoustic waves on submerged meat). But none packed quite the punch of U.S. Patent No. 3,492,688 A, understatedly titled ;Apparatus for tenderizing food.; Submitted by Charles S. Godfrey in 1966, the method called for breaking up tough fibers in subprime cuts via high explosives. Bomb and beef would bathe in the same water-filled tank to maximize the effect多年来,美国专利及商标局搜集了各种使肉质鲜嫩的技术,从传统手艺(敲击,酶嫩化剂)到创新技术(使用压力脉冲或声波让肉均匀变化)应有尽有。 Godfrey thought that the high explosive approach would blow past the shortcomings of other pressure techniques by creating a much more dramatic and sudden pressure change at the shock front. He might have been onto something, since several other patents have since built on the idea, and at least one company has put it into practice. A pioneer of early nuclear weapons research, Godfrey was also a seasoned veteran of explosive technologies. In addition to helping design the diminutive test nukes set off on Eniwetok Atoll in the 1950s, he held patents in high velocity explosives and shaped explosives and the use of explosives in rock fracturing and excavation. 4.Pica: So Many Words, So Many Food Fixations4. We all have our share of unusual cravings, but few are as startling as the wide range of materials consumed by people with the disorder pica, the repeated eating of largely non-nutritive substances like wood, soil or paint chips. The word pica derives from the medieval Latin name for magpie, a bird reputed to eat just about anything任何人都可能有一些奇特的欲望,但是却很少有像那些异食癖患者一样有着令人咋舌的欲望,他们吃各种东西,比如木头、泥土或者油漆木片这种没有营养的物质。 Thanks to Greek and Latin, there#39;s a name for every neurosis, and the many flavors of pica are no different. Xylophagia describes the consumption of paper, pencils, tree bark or other woody items. Chewing and eating glass is the habit of those with hyalophagia, and of course there#39;s also urophagia (urine), coprophagia (feces), geophagia(dirt), autosarcophagy (eating bits of oneself) and, yes, anthropophagy (human flesh). People with trichophagia chew and/or swallow their own hair, which can result in a dangerous trichobezoar (hairball) that blocks the intestines and requires surgery. In 2007, surgeons removed a 10-pound (4.5-kilogram) trichobezoar that had completely filled the stomach of an 18-year-old woman. Such compulsions are frequently associated with a psychological condition or learning disorder. The prevalence of pica varies from 4 to 26 percent among the institutionalized, and the condition can co-occur with Kleine-Levin syndrome, mental retardation and schizophrenia. But it also can crop up among otherwise healthy children and in men and women of all ages and cultures, sometimes in response to a dietary deficiency. 3.The Pickle-ice-cream-flavored Mystery of Pregnancy Cravings3. The scene depicting a pregnant woman dispatching her mate for pickles and ice cream in the wee small hours is so trite as to qualify as a stereotype, but it#39;s rooted in a familiar phenomenon. Being pregnant can cause unusual cravings, drive a desire to double down on old habits or bring on new and strong aversions. Yet researchers still don#39;t fully understand the biological and behavioral mechanisms behind these hankerings. A few patterns have emerged over the years. For example, an expecting mother#39;s cravings tend to fall within culturally available fare; in Tanzania, women crave (in order) meat, mangoes, yogurt, oranges, plantains and soft drinks, whereas American women crave dairy and sweet foods. Connections have also emerged between pregnancy-linked hormone shifts and an increase in neuropeptide Y, a hypothalamus-born chemical messenger associated with appetite in general. So what inspires specific cravings? It#39;s possible that some yens are meant to counter the odd smells, strange tastes, phantom odors and food aversions that can crop up during pregnancy. But this is only one possibility and requires further study. 2.The Nose Knows Numminess2. We all recognize the role of smell in whetting our appetites, conjuring emotions and stirring memories, yet those little buds on our tongues still get most of the credit for detecting taste. According to researchers in the field of neurogastronomy, however, we have it backward. Taste buds evolved to detect basic notes of sweet, salty, sour, bitter and umami (the savory flavor of mushroom or soy sauce) to help us distinguish energy-rich carbohydrates, find essential salts, test foods for ripeness, detect toxins and identify proteins . But it#39;s the sensation of smell -- specifically, the retronasal smells that waft into the nasal cavity from the mouth as we savor food -- that forms the fuller picture of flavor in our brains. Smell is so nuanced that scientists have compared it to sight for the way it forms ;pictures; of millions of flavor combinations and determines resemblances among them. Research has further linked the sense of smell to psychological well-being and neuroplasticity. Molecular gastronomists, who try to understand the physics and chemistry of food for artistic and culinary effects, make careful use of odorants and aromatics in their creations, but the interactions between saliva and food make isolating the key smell-ecular elements difficult. Oh, well. There#39;s always marketing. 1.A Food by Any Other Name1. Foods are known by many names. Some refer to subtle distinctions, as coriander and cilantro refer to the seeds and the vegetative pieces, respectively, of the Coriandrum sativum plant. Others might reveal cases of mistaken identity, as when many Americans each Thanksgiving mislabel sweet potatoes as yams, when in fact they are two separate plants. Then there are those foods that assume new monikers for marketing purposes. Canola (a portmanteau of ;Canada ; and ;ola; for oil) is actually a specially bred rapeseed oil rebranded to avoid negative associations with the word ;rape; (rape, or Brassica napus, is a plant in the mustard family) and possibly to distance it from earlier versions of rapeseed oil, which were toxic to humans . Kiwifruit is not from New Zealand at all -- it#39;s a Chinese gooseberry rebranded by exporters to avoid negative associations in Cold War American markets. It#39;s also not a gooseberry, so it#39;s just as well that they changed its label. The Patagonian toothfish (Dissostichus eleginoides) was renamed ;Chilean sea bass; to better whet customer appetites and was so successful that it now faces overfishing, despite not being a sea bass at all. For similar reasons, restaurant customers now know the ;slimehead; (Hoplostethus atlanticus) as the far more appealing ;orange roughy;. A rose is a rose is a rose, but cheap hake sells better as scarlet snapper. 翻译:泯泯 审校:Freya然 来源:前十网 /201603/429451Do you ever feel like you#39;re in over your head and at any moment you#39;re going to burst? You#39;re not alone. As humans, we overthink, overanalyze and dramatize. Lucky for us, we also have the power to take a deep breath, sit back and turn our lives around. It#39;s not easy to stop our negative thoughts from flooding through, especially during hard times, but it#39;s also not impossible. Here are the top 10 ways you can stop your personal insanity:你是否曾有过头脑发胀、随时要崩溃的感觉? 10.Meditation10.冥想The practice of meditation has been around for centuries, and for good reason. When you feel like you have 50 different thoughts running through your head every 60 seconds: Meditate. Sit comfortably, close your eyes and repeat a simple mantra. Keep it short and sweet, especially when you#39;re feeling stressed. For example, you can repeat #39;relax#39; or #39;breathe#39;, or even just start counting. You#39;re literally training your mind to sustain single-pointed concentration, which helps you prioritize your thoughts… and life. 9.Move Your Body9.运动Whether you like vigorous exercise or something more low-key, your body craves movement. It#39;s easy to practice at home; these 4 yoga poses to help you relax are easily accessible for anyone. Exercise with strong breath control and a little bit of sweat helps you release tension while embracing positivity and self-worth. 8.Be Honest With Yourself8. Be true to yourself. This sounds obvious and simple, doesn#39;t it? It#39;s one of the hardest things to do. We#39;re always influenced by the people and media around us; it#39;s easy to lose yourself in the chaos. At the end of the day, always come back to what you want to do and don#39;t be scared to veer away from the crowd. It#39;s ok to become a little selfish, you#39;re the one that lives with your decisions, after all. 7.Clear Your Clutter7. Are your magazines stacking up and trinkets suddenly taking over your countertops? Having clutter around the house can bring clutter into your life. Clearing and refreshing your space is a great way to start fresh; here are 6 simple ways you can renovate your kitchen space that are inexpensive space savers and re-vamps. Try to keep things off the floor and your draws from overflowing, this simple strategy can really shift into your life. You are what you eat! Honestly… the saying is true. When you eat foods that not only fulfill your hunger but nourish your body, it makes you feel good physically and mentally. Having a fresh juice rather than can of soda gives a feeling of accomplishment, like you have control over your diet and your life.

In 184, the Yellow Turban Rebellion occurred, which was a peasant rebellion against the Eastern Han Dynasty in the reign of Emperor Ling. It was named for the color of the scarves which the rebels wore around their heads. Since the rebels were associated with secret Taiping Taoist societies, the rebellion also marked an important event in the history of Taoism. After the death of Du Wu, Emperor Ling became a puppet manipulated by eunuchs. In order to secure the throne, he tried to please eunuchs, going so far as to refer to one of them as his father. Thus, the eunuchs extorted money from the people unscrupulously. The corrupt imperial court, the landlords’ oppression along with the successive natural disasters made it impossible for the people to live on, so many of them rose up to revolt. At the end of the Eastern Han, Zhang Jiao of Julu (modern Pingxiang in Hebei Province) established a secret Taoist sect — Tai Ping Dao , declaring himself to be Great Teacher. He traveled around the country propagating his faith and dispensing free treatment to the sick. In ten year or so, Tai Ping Dao sp more than half the country, and enlisted several hundreds of thousands of followers. In order to start up rebellion, Zhang Jiao divided the whole country into 36fang (section) with a bigger consisting of more than 100 000 persons and a smaller one 6 000 ~ 7 000. Meanwhile he brought forward a slogan, “The Blue Sky has perished, the Yellow Sky will soon rise; in this year of Jia Zi (i. e. , the year 184), let there be prosperity in the world !”( Blue Sky was referred to the Eastern Han and Yellow Heaven to the Yellow Turbans), which was an obvious call for peasants uprising a-gainst the Eastern Han court. He also sent Ma Yuanyi, to the Capital Luoyang and other places to see that everything was in order. The uprising had been set on March the fifth, 184, but had to be launched in February ahead of schedule, for the betrayer, Tang Zhou, informed against the Yellow Turbans. Zhang Jiao called himself ‘‘Heavenly General”,his younger broth-ers Zhang Bao, “General of the Earth” and Zhang Liang, “General of AAen”,who assisted him in the rebellion. In less than a month, the movement took hold with people responding from all over the country, and the uprising progressed rapidly. The peasant uprising shocked the imperial court. On one hand,Emperor Ling mustered troops to defend the capital; on the other hand,he appointed generals Huangpu Song, Zhu Jun and Lu Zhi to attack the Yellow Turban forces. Huangpu Song and Zhu Jun had an army of 40 000. In the attack on Ying-chuan, Zhu Jun was defeated, while Huangpu Song was besieged in Changshe (modern Changge in Henan Province). With the help of reinforcements, they conquered the Yellow Turbans, slaughtering tens of thousands of rebels. The imperial court had dispatched Lu Zhi to fight against Zhang Jiao, yet the attack yielded no victory. Then the unsuccessful Lu Zhi was replaced by Dong Zhuo, who also suffered a failure. Finally, Huangpu Song was moved to attack Zhang Jiao. At that time, Zhang Jiao died of illness, and the rebellious army was led by Zhang Liang and Zhang Bao. Huangpu Song sprang a surprise attack put more than 80 000 insurgents, including Zhang Liang, out of action. The Y Turbans retreated to Xiaquyang(the west of modem Jinxian County in Hebei), only to suffer another defeats when encountered with Huangpu ’ s army there. Zhang Bao was killed in the battle, and several hundred thousand of his men were killed, wounded or captured. After nearly nine months of fierce battles, the main force of the Yellow Turban Army was wiped out, but the flame of peasants uprisings were far from extinguished. Many armed insurgent units kept on fighting. By 192, there were still 300 000 or more Yellow Turbans operating in present-day Shandong. Thirteen years later, the Heishan (Black Hill) Army in central-south Hebei still numbered upwards of 100000.13年后河北中南部的黑山军亦有部众10万人。Despite the failure of the Yellow Turban uprising, it shook the Eastern Han Dynasty regime to its foundations. Its days were numbered. As a result of the Yellow Turbans, northern China was devastated, and the military leaders were prepared for the struggle among the warlords. When Emperor Ling died in 189, Empress Dowager He took over regency, in-stalling Lingdi’s young son 13-year-old Liu Bian as emperor. He Jin, brother of the Empress Dowager, thought that the time had come to get rid of eunuchs definitely, and in order not to repeat the failure of 168,he invited Dong Zhuo to command his troops to enter and garrison in the capital Luoyang. However, the information was leaked to the eunuchs, who acted first and had He Jin killed. The powerful eu-nuchs being without military support, Yuan Shao and his brother Yuan Shu broke into the palace with their forces and killed more than 2 000 eunuchs. Not long after that, Dong Zhuo entered Luoyang, who deposed Emperor Shao and put Liu Xie, Xiandi on the throne. By intimidation and brutal force, Dong Zhuo gained his own position at the court ensured, while most men of rank had left the capital. Bureaucratic official throughout the country launched punitive expeditions against Dong one after another, and the situation of separatist warlord regime came into being eventually. The Eastern Han Dynasty endured only nominally and soon gave way to the Three Kingdoms. /201512/413041

When I awoke one recent morning in Prague from unsettling dreams, I found myself changed into a tourist on a mission. Changed, anyway, from the traveler I had been when I lived in Prague for three years in the 1990s. Back then, whatever associations I had between the city and the writer Franz Kafka, a native son, were negative. I loathed the commercialization of Kafka, his face scrawled across coffee mugs and T-shirts in souvenir shops, his name emblazoned on awnings of Old Town cafes and restaurants. Yet there was always something nagging at me about never having explored the Kafka trail in Prague, an integral part of the city’s cultural history. On top of that, Kafka’s novella “The Metamorphosis,” in which the protagonist, Gregor Samsa, finds himself transformed into a bug, was first published in book form this month a century ago. And so, I thought, what better time to finally explore the writer and the city with which he is inextricably intertwined. In doing so I’d talk to a fairly diverse group of people about how this city may have influenced one of his most famous works — and how it may have shaped the famously tortured writer himself. Once while standing at a window at the Oppelt House at Old Town Square 5, Kafka looked out at the square and said, “This narrow circle encompasses my entire life.” He wasn’t exaggerating, as I learned on a tour booked through the Franz Kafka Society. The guide, Ondrej Skrabal, a 23-year-old law student, showed me the building where Kafka was born (or, rather, the building that replaced it), and from there we hit what seemed like a dozen other places he had resided — so much so that it became underwhelming. “That far left window on the third floor,” Mr. Skrabal said, pointing to another building on Old Town Square and pausing. “Yes, Kafka lived there, too.” We passed by a shop his father had owned and stopped to take in the intriguing Franz Kafka Monument (where Dusni and Vezenska Streets meet in Old Town), a 12-foot-high bronze statue of an upright empty suit with a smaller man — bearing the resemblance of Kafka — riding on his shoulders. It’s a popular photo op among tourists, and a 12-inch version of it is the literary award that the Franz Kafka Society gives to winners of the annual Kafka Prize. Aside from the statue, my Kafka tour wasn’t proving to be particularly memorable. But then we got to Kamzikova 6, a building in a small hidden alley just off Old Town Square. The building housed a restaurant called U Cerveneho Pava (At the Red Peacock) and a Segway rental shop aimed at Russian tourists. “Here,” Mr. Skrabal said, pointing to the door, “was a high-class brothel and Kafka regularly came here to chat with the girls.” “You mean ‘chat,’” I said, using air es.“你的意思是,‘聊天’,”我说着,在空中比划了一对引号。“No, really,” he said, “Kafka was interested in all types of people, and he really did come here to have philosophical discussions with the prostitutes.”“不,确实是聊天,”他说,“卡夫卡对不同类型的人感兴趣,他的确是来与们讨论哲学的。”The one Kafka home Mr. Skrabal didn’t take me to was Parizska 30, where the writer lived when he wrote “The Metamorphosis” — that building was destroyed in 1945; today, an InterContinental Hotel stands in its place. “The Metamorphosis” takes place entirely in an apartment, and Kafka scholars have said the writer used his fourth-floor apartment at the time as a model for the one in the story. I wasn’t staying at the hotel, so I took the elevator to the rooftop restaurant, Zlata Praha. From the outdoor terrace, with the Gothic and Baroque spires of Old Town at my back, I looked down at Svatopluk Cech Bridge, an Art Nouveau span that would have been only a few years old when the writer lived there. This was, more or less, Kafka’s view from 1907 to 1913. He wrote to a friend about the then-new bridge, saying that this part of the Vltava River had been popular for suicide attempts: “It will always be more pleasant to walk across the bridge up to the Belvedere than through the river to Heaven.” Another important Kafka site that is now a hotel is the erstwhile insurance office where Kafka worked from 1908 to 1922; he complained in his diary that a company business trip was the reason the ending of “The Metamorphosis” was so unsatisfying. Today the neo-Baroque building is the Hotel Century Old Town Prague, which has some not-so-subtle Kafka references: a bust of the writer; a restaurant named after one of his fiancées, Felice; and, just outside of Room 214, a photo of the writer and a plaque indicating it had been his office. I had hoped to stay in Kafka’s former office, but it was booked. So I went with plan B: sneak up to the second floor to get a peek at the room. I got to the door and saw the plaque and photo; I considered knocking on the door, but it was 8 a.m. and I didn’t want to disturb its occupants. I stopped into the Franz Kafka Museum, in the Mala Strana neighborhood, hoping to find a treasure trove of “Metamorphosis” artifacts and information. The self-guided tour provided an entertaining and educational hour on the writer, but there wasn’t much about his famous story. A couple of days later I turned to the Franz Kafka Society Center, behind the Franz Kafka Bookstore in Josefov. “Many Czechs were unfamiliar with Kafka until recently,” Marketa Malisova, the center’s director, said, explaining that his writing was banned during the German occupation of World War II and then became unpopular after the war because of anti-German sentiment (Kafka was a Czech Jew who wrote in German).“许多捷克人对卡夫卡知之甚少,直到不久前这一状况才得以改变,”中心主任马尔凯塔 ·马利绍娃(Marketa Malisova)说,她解释说,他的作品在德国占领时期被禁,战争结束后因为人们的反德情绪不受欢迎(卡夫卡是捷克犹太人,用德语写作)。“And then there’s the Communist period,” she said. “Because he foretold the tyranny that was to come, the Communist regime didn’t exactly promote his writing.”“后来到了共产主义时期,”她说。 It wasn’t until after the 1989 Velvet Revolution when tourists from Western Europe and the ed States began turning up wanting to see the Kafka-related sites that Czechs recognized his importance. “I met a local guy here in Prague in the early ’90s,” Ms. Malisova said, “who asked: ‘Who is this Kafka guy? Is he American? I only see American tourists with Kafka T-shirts.’ Just before I said goodbye to Ms. Malisova, she pulled out a book in a plastic container. It was a first printing of “The Metamorphosis”; on its cover was the image of an open bedroom door, a man looking away and covering his face in horror. Kafka was quite vague about what kind of insect or beast Gregor Samsa had metamorphosed into. He specifically used the phrase “ungeheuren Ungeziefer,” a “monstrous vermin,” as some of his English-language translators have interpreted it. “Not that, please, not that!” he wrote in a letter to his Leipzig-based publisher in 1915, reacting to a potential cover to the very first edition. “The insect itself cannot be drawn. It cannot even be shown at a distance.”“不要画那个,请一定不要画那个,”他在1915年写信给莱比锡的出版商时,对于第一版的封面设计给出了这样的反应。 That hasn’t stopped ers from conjuring up images of the protagonist as a beetle or cockroach. This includes the infamous Czech artist David Cerny. (David Cerny)。I met him one day at the MeetFactory, an art center in the Smichov district where he has his studio. Prague is sprinkled with provocative pieces by Mr. Cerny — a sculpture of a urinating man (directly in front of the Franz Kafka Museum), a statue of the Czech patron saint King Wenceslas sitting on an upside down dead horse. His most recent installation in Prague is a sculpture of Kafka’s head, set behind the Tesco department store in the center of town. The 36-foot-high head is made up of 42 moving chrome-plated layers, which move both in synchronicity and in opposing directions. Mr. Cerny’s original idea was a fountain featuring three figures: a robot, referencing the Czech-language writer Karel Capek, who coined the term; a Golem, representing the Yiddish language; and Kafka’s beetle, referring to the German language. “I wanted to remind people that Prague was once a city of three languages,” Mr. Cerny said. Unfortunately, city water regulations prevented him from placing a fountain there, so instead he came up with the huge reflecting Kafka head, which is based on similar work of his on display in Charlotte, N.C., called “Metalmorphosis.” “I loved the irony that this sculpture faces a city government building in Prague,” he said. “Imagine you’re angry because the clerks are doing nothing, only saying for you to go to another office and then another office and another until finally you hear, ‘This office is closed.’ And then you walk out of the building, and there’s the huge head of Kafka looking at you, reminding you of the irony.”“这座雕塑正对着布拉格的市政府大楼,我喜欢这种讽刺意味,”他说。 A similar irony is not lost on Jachym Topol, the author of five novels and a political dissident in the 1970s and ’80s. I briefly met up with him at a literary festival in Prague, and when I mentioned Kafka, he was happy to talk about what Kafka means today. “During the Communist regime, we used to make samizdat copies of Kafka’s works such as ‘The Metamorphosis,’ ” he said. “And now, along with the Charles Bridge and the castle, Kafka has become a part of Prague kitsch. He’s everywhere and he’s for sale everywhere. Latent jokes seemed to come up with nearly everyone I talked to about the writer, including Jaroslav Rona, the artist who created the Franz Kafka Monument — the statue of the writer riding atop an empty suit — at Café Louvre, an attractive high-ceilinged second-floor spot where Kafka would hang out with his writer friend Max Brod. Mr. Rona’s first attempt at creating a sculpture for the competition to win the right to design the memorial was, naturally, a beetle. The final concept was inspired by a Kafka short story called “Description of a Struggle” — though it turns out that he inserted quasi-hidden references to “Metamorphosis” as well. “All the other pieces in the competition were basically Kafka on a pedestal,” Mr. Rona said. “But what I did was, after ing ‘The Metamorphosis,’ I realized something about Kafka’s thinking: I love art where it isn’t obvious what the artist is thinking.“竞赛中的其他作品基本上都是基座上的卡夫卡雕像,”罗纳说,“而我的做法是,在读过了《变形记》之后,我了解到了卡夫卡的想法:我喜欢那些让人猜不透艺术家想法的艺术作品。”“And I think this was Kafka’s philosophy, too — not only in ‘The Metamorphosis,’ but in a lot of his writing. So I used that same type of thinking to create the monument to Kafka.”“我认为这也是卡夫卡的理念——不仅是在《变形记》里,在他的许多作品里都是。 I asked about possible “Metamorphosis” allusions. He smiled playfully and glanced down at his cappuccino. “I couldn’t imagine making a monument to Kafka without some kind of reference to ‘The Metamorphosis,’ ” he said. “So I planted a somewhat secret reference to it.” After our meeting, I walked to the statue and took a closer look at its base. And there, as I stood among the photo-snapping tourists, I saw on the sidewalk around the base the outline of a beetle. IF YOU GO 参观建议What to See景点推荐In Mala Strana, the Franz Kafka Museum (Cihelna 2b; 420-257-535-373; kafkamuseum.cz) is a good primer for those not familiar with the author and his work. (Cihelna 2b; 420-257-535-373;kafkamuseum.cz)。TheFranz Kafka Society (Siroka 14, 420-224-227-452; www.franzkafka-soc.cz) is a bookstore and center dedicated to the writer. Mr. Jin even sold a bottle of Brewmeister Snake Venom, a high-alcohol barleywine-style beer from Scotland, for about 2,700 renminbi, or more than 0. “Slowly, Chinese people have more money in their pocket,” Mr. Jin, 43, said in his apartment, where over 6,000 bottles from more than 60 countries filled the shelves. “After they have money, some want something better in terms of taste as well as lifestyle, especially young people.”“慢慢的,中国人口袋里钱多了,”43岁的金鑫在他的公寓里说,酒架上摆放着6000多瓶来自世界60多个国家的酒。 As tastes rapidly change, Chinese consumers are swapping mass-produced local beers for imports and local craft beers. It is the type of opportunity that is at the heart of Anheuser-Busch InBev’s 6 billion deal to buy SABMiller, its rival global brewer. While major markets in Europe and the ed States have been sluggish, developing markets like China offer a growing customer base and the potential for a stronger profit. The Chinese middle class is swelling with young, affluent professionals who are more willing to spend money on brands and who are experienced travelers looking for a taste of other countries back home. And in China, most beer is still considered affordable. So sales have held up relatively well even as wine, the Chinese spirit baijiu and other more expensive liquors have been hit by the country’s anticorruption crackdown and the slowing economy. “It’s an escape route from maturity in the West,” said Spiros Malandrakis, a senior analyst of alcoholic drinks at the research firm Euromonitor International, referring to the established markets of the ed States and Europe.“这是逃离西方成熟市场的一条出路,”酒精饮料研究机构欧睿国际(Euromonitor International)的高级分析师斯皮罗斯·马兰拉基思(Spiros Malandrakis)说,他指的是美国和欧洲的成熟市场。In China, Anheuser-Busch InBev and SABMiller are betting on premium products. The two beer behemoths were among the first international entrants into China in the 1990s and initially teamed with local brewers. Anheuser-Busch InBev has since bought Harbin and Sedrin, two other top domestic brands. Together, the international brewers account for about one-third of the overall beer market in China. As they pursue a merger, given their dominance, Anheuser-Busch InBev and SABMiller are expected to prune their portfolio in China to keep regulators happy, though it remains unclear where the trimming will be done. Some analysts think they would be able financially to justify the sale of a big domestic brand like Snow, since the market is moving toward premium offerings. “They might be forced to divest, but it might not be the end of the world for them, because Snow is not necessarily the price point for them,” said Shaun Rein, founder of China Market Research in Shanghai. When the deal was announced, Anheuser-Busch InBev said it would “promptly and proactively” resolve any regulatory issues in China. The focus follows the shift in the market in recent years. Imports have swiftly grown to 1.4 billion renminbi in 2013, or around 0 million, from 335 million renminbi in 2009. But the total volume of beer sales in China has dipped of late. Homegrown craft beers are gaining favor. Beijing is home to about half a dozen microbreweries, and others have popped up in cities across China. At the Jing-A Brewing Taproom in Beijing, the owners, transplants from Connecticut and Toronto, serve American-inspired beers with local flair, including Worker’s Pale Ale, Airpocalypse Double IPA and Mandarin Wheat. Ji Chen, a banker, developed a taste for fine beer as a student in Belgium. When he returned to China, Mr. Chen, now 28, started buying imported beer at the supermarket and hanging out at brew pubs. “I don’t think it’s expensive,” he said, sipping the Flying Fist IPA at Jing-A. “If you go out to drink at a bar, you would have to spend this much for any drink you get. And craft beers here are of good quality.”“我觉得不贵,”纪晨在京A酒吧抿了一口飞拳IPA说。 The high-end varieties can fatten a company’s bottom line. “All of this premiumization and trading up is the biggest revenue driver of our industry,” Jean Jereissati, Anheuser-Busch InBev’s China president, said at an investor seminar in September. “And it is very relevant for our company.”“这种产品高端化和消费升级是我们行业最大的营收动力,”百威英中国区总裁让·热雷萨蒂(Jean Jereissati)去年9月参加投资者研讨会时说。 Anheuser-Busch InBev and SABMiller are digging deep into their cooler of longtime brands in the hope of attracting more discerning customers. In part, they are promoting the provenance of their brands. When Budweiser Supreme was introduced, the company projected a detailing the recipe’s origins and ingredients onto a giant bottle in various Chinese cities. Against a striking soundtrack, the company described how the beer had the “rich aroma of wheat malt flavor and aristocratic bearing.” Lifestyle, too, is major selling point. Other advertisements featured Budweiser Supreme being poured in a restaurant by a waiter wearing white gloves. In the summer, women in their 20s, wearing dresses with Corona or Budweiser logos and sometimes long white boots, were often seen milling around the bars and chatting with customers in the upscale Sanlitun area of Beijing. “They put a lot of money into the marketing, the heritage — all those things make consumers pay more for it,” said Jonny Forsyth, a global drinks analyst at Mintel, a research firm. “That’s what’s been missing in China. Younger people are more receptive to it.”“他们花了很多钱营销,宣传品牌传承,促使顾客花更多钱消费,”市场调研机构明特尔(Mintel)全球饮品行业分析师容尼·福赛思(Jonny Forsyth)说。 The message is getting through to consumers, who are increasingly willing to pay for beer. At Heaven Supermarket, a store and bar with a backpacker vibe, Chen Jing, 30, browsed through the imported beer with her boyfriend, both of them clutching beers that cost about 50 renminbi each, or nearly . A bottle of Snow from the grocery store next door cost just 1.9 renminbi, or about 30 cents. Most of the bottles going through the checkout at Heaven are overseas varieties like Hoegaarden, Corona and Budweiser, selling for 15 renminbi. And the store, across the road from a Rolls-Royce and Bentley dealership, is not short of people perusing more expensive beers, which can cost up to 100 renminbi, or about . Ms. Chen started drinking foreign beer after vacationing around China and Southeast Asia. She has taken such a liking to the beer culture that she is planning a holiday in Belgium. “I would rather be spending money on few quality beers than buying lots of cheap beers and feeling full and headachy,” she said. “It’s more about the lifestyle I choose than simply drinking.”“我宁愿花钱买几瓶好酒,也不愿意买一堆便宜货,喝完了感觉很胀,还头疼,”她说。 /201601/423723
